Scatter woodchips across the bottom of your Dutch Oven and place the fresh herbs you have chosen on top. Clean and check your seafood
Place the seafood on top, and place them with the opening facing up so they have the space to open up.
3. Heat & Smoke
Put the pan on a high heat until the wood starts to smoke. When the smoke starts to come out, turn the heat to medium and place the lid on the pan. Smoke until the shellfish have changed colour and the shells have opened up. Discard the ones that have not opened up.
