Ingredients

  • 500 g crumbly potatoes
  • 50 g clarified butter
  • Butter
  • Course salt


Preparation

Boil the potatoes until really soft. Drain and let them steam untill completely dry. Cut in 1 cm slices.


Bake the potatoes in clarified butter. You will have some small crispy bits and bigger soft bits. When they are practically done, add a few nobs of regular butter so your baked potatoes will have a beurre noisette flavour.
