Ingredients

  • 1 lamb rack (6 to 8 chops)
  • olive oil
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp ground black pepper


Preparation

1. Prepare
Let the rack of lamb get up to room temperature before cooking. Heat your oven to 180ºC.  Make a simple marinade with the garlic, herbs, salt and pepper. Rub the marinade all over the lamb rack.

2. Sear
Put a double handle fry pan on high heat, heat the oil and fry the lamb rack for 2 to 3 minutes until golden brown. Remove from pan and let rest for 2 minutes.

3. Oven
When rested, transfer the lamb in the fry pan to the oven for 20 minutes. Remove from oven and let the lamb rest for 15 minutes.

4. Serve
When rested, serve the lamb on a chopping board. This roast combines very nice with pan fried potatoes, or cauliflower rice with feta.
