Ingredients

  • 1 savoy cabbage
  • Juice of half a lemon
  • Salt and pepper
  • Your favourite mayonnaise
  • 2 big crabs, ask your fishmonger


Preparation

1. The Crab
Kill the crab before cleaning if it is still alive. Dunk the crab in boiling water for 60 seconds. Remove and submerge it in cold water. Prepare the cabbage leaves, peel the ones you need of the cabbage, clean and remove the stem from the leave.


2. Clean
Cut the crab into quarters by splitting down the middle from head to tail. Remove the meat from the legs and claws. Blanch the big leaves of the cabbage so they are cooked but still crispy.

 

3. Mix & Fill
Mix mayonnaise with lemon juice, salt and pepper then stir it in the crab.  Put a spoon full of the crabfilling in the center of the cabbage leave. Fold the sides over the filling and then roll up the leaf. Do the samen with all other leaves
