Beet Chocolate Mousse

Beet gives this mousse an earthy flavor and makes this a surpirsing variation to a regular chocolate mousse 

Beet Chocolate Mousse

Ingredients

  • 100 g beet puree
  • 2 egg's
  • 1 teaspoon of sugar
  • 50 g pure chocolate
  • Half a teaspoonful of ground cinnamon
  • 1 pinch of sea salt


Preparation

1. Whites
Seperate the egg's and beat the whits until they form soft peaks. Add the sugar and continue to beat until stiff

2. Melt
Melt the chocolate and the butter in a bowl over your Dutch Oven. Add the egg yolks in to the chocolate mixture, mix quickly. Add the beet pure and mix again.

3. Set
Ad one spoon of beet mixture in to the whites, then add all of the whites mixture in to the beet and chocolate mixture and carefully fold through. Pour the mixture in to 4 serving dishes and chill for 4 hours to set.
