COMBEKK FROM BREDA, MAKES PANS OUT OF RAILS

The Breda-based company COMBEKK makes cast-iron pans, known abroad as Dutch ovens. Mark Suurbier, director of COMBEKK: When I discovered the story behind this pan, I was hooked. The Dutch oven is a unique product with which we can conquer the world.”

The story behind Mark’s pan begins in the 17th century when cast iron pans were first made in the Netherlands, which could be placed in a fire. A mould of sand was filled with cast iron, and once the iron had hardened, the sand was removed.

The pans had thick walls and bottoms, so the heat was retained well. The meat would sear and then simmer for hours. The Dutch design was copied in various countries. Via England, the Dutch oven ended up in the early colonies of North America. The Americans used the pans on their way to the West.

So “the pans from COMBEKK are making a comeback.”

The French hijacked the design and renamed the pan casserole or cocotte. Orange cast iron pans were produced in the Netherlands until the 1970s.
